Packing a bag, enduring a long flight, just to get your hands on some fresh schnitzel? What about pretzels or bratwurst? Luckily for Utahns, you won\u2019t have to travel quite that far, all thanks to <em>Weller\u2019s Bistro<\/em>, with locations in Ogden and Layton.<\/p>\n<p style=\"text-align: justify;\">Opening its doors in August of 2019, <em>Weller\u2019s Bistro <\/em>has aimed to bring people together and serve delicious German food and drinks. Restaurant owner <strong>Jan Weller<\/strong> says the establishment enjoys seeing familiar faces, as guests return frequently to enjoy their favorite dishes.<\/p>\n<h3><strong>\u201cThe menu is kind of a mix of German and American food, I would say. It kind of reflects me in a way.&#8221;<\/strong><\/h3>\n<p style=\"text-align: justify;\">Weller, originally from Germany, has worked in the industry for almost 30 years. From culinary training in Germany to working at the <a href=\"https:\/\/thesavoylondon.com\/\" target=\"_blank\" rel=\"noopener\"><em>Savoy Hotel<\/em><\/a> in London, Weller\u2019s background in fine dining prepared him for his culinary career. He then moved to Utah in 2003, where he continued his fine-dining work at <a href=\"https:\/\/thegoldenerhirsch.com\/\" target=\"_blank\" rel=\"noopener\"><em>Goldener Hirsch<\/em><\/a>. He eventually found himself working at the <a href=\"https:\/\/highwest.com\/\" target=\"_blank\" rel=\"noopener\"><em>High West Distillery<\/em><\/a>, which he credits for inspiring a new love of approachable, fun dining experiences.<\/p>\n<p style=\"text-align: justify;\">Weller says it was \u201calways my dream to open my own restaurant. The dream kind of solidified in 2018.\u201d That year, Italian restaurant <a href=\"https:\/\/www.slugmag.com\/community\/food\/food-reviews\/gabor-brothers-tempting-italian-in-davis-county\/\" target=\"_blank\" rel=\"noopener\"><em>Gabor Brothers Main St. Grill &amp; Pizzeria<\/em><\/a> closed its doors, and the space became available. Photo: Dominic Jordon<\/figcaption><\/figure>\n<p style=\"text-align: justify;\">had enjoyed the restaurant and was sad to see it go, but was thrilled over the new opportunity. \u201cI couldn\u2019t believe it,\u201d Weller says. \u201cIt all came together pretty quickly at that point, because location is everything. It\u2019s right on Main Street.\u201d<\/p>\n<p style=\"text-align: justify;\"><em>Weller\u2019s Bistro<\/em> also inherited the brick pizza oven left from the <em>Gabor Brothers <\/em>and decided to keep pizza on the menu! German staples featured on the menu include goulash, schnitzel, frikadellen and a German dip sandwich. And if you\u2019re not hungry enough, wait until I tell you the Bistro\u2019s pretzels are made fresh in-house. They even have a rotating drink menu, which features German beers and seasonal cocktails. \u201cThe menu is kind of a mix of German and American food, I would say. It kind of reflects me in a way,\u201d Weller says.<\/p>\n<h3><strong>\u201cWe just want to put forth a <\/strong><strong>product that is high in quality and that is approachable for people.\u201d<\/strong><\/h3>\n<p style=\"text-align: justify;\">Weller has introduced German food to many people in the area and is always happy to see them come back for more. He\u2019s also found the restaurant to be a little slice of Germany for people with personal ties to the country. \u201cThere\u2019s a lot of German heritage in Utah. There\u2019s a lot of returned missionaries. Photo: Dominic Jordon<\/figcaption><\/figure>\n<p style=\"text-align: justify;\">Beyond scratch-made food, Weller is focused on his guests and aims to give them a great experience whenever they come in. \u201cWe try to keep it fun for regulars,\u201d Weller says. \u201cYou know, we have a lot of regulars in Layton that come in for the specials, because they\u2019ve tried everything.\u201d Weller says he hopes his is the kind of restaurant people return to a couple times a month, rather than just for special occasions. \u201cWe just want to put forth a product that is high in quality and that is approachable for people,\u201d he says.<\/p>\n<p style=\"text-align: justify;\">A second <em>Weller\u2019s Bistro<\/em> opened in Ogden in July 2025 and has a large patio where Weller hopes everyone and their dogs will spend the summer. <em>Weller\u2019s Bistro<\/em> also offers catering and has a food truck called the D\u00f6ner Wagon, which can be found at rotating locations, including <a href=\"https:\/\/tfbrewing.com\/\" target=\"_blank\" rel=\"noopener\"><em>T.F. Brewing<\/em><\/a> in Salt Lake City. Weller says he is looking to expand <em>Weller\u2019s Bistro<\/em> in the future and hinted that the Salt Lake area may be next.
